Ingredients:
1 Lb.
 Feta Cheese, crumbled
2
 Egg Yolks
1
 Egg
3 Tbsp.
 Chopped Parsley
Dash
 Finely ground Pepper
1/4 Lb.
 Butter, melted and kept warm
1 Lb.
 Filo Dough
Recipe Directions:
1.  Mash feta cheese with a fork. Add egg yolks, egg, parsley, and pepper.
2.  Melt butter in a saucepan. Keep warm, but do not allow to brown.
3.  Lay a sheet of filo on a large cutting board. Brush with melted butter. Cut into strips about 1 1/2 to 2 inches wide. Place 1/2 tsp of the cheese mixture on each strip about 1 inch from base. Fold to form a triangle. Continue until all cheese mixture and filo have been used.
4.  Place triangles, side by side, in a shallow roasting pan or baking sheet*.
5.  Bake at 350F for 20 minutes, or until golden brown. Serve at once.
6.  NOTE: Feta Cheese Triangles freeze well. Before serving, remove from freezer and let stand 15 to 20 minutes. Bake at 325F until golden brown.
7.  * Pan must have four joined sides; otherwise butter will fall to bottom of the oven and burn.
