| 1. |
Mash feta cheese with a fork. Add egg yolks, egg, parsley, and pepper. |
| 2. |
Melt butter in a saucepan. Keep warm, but do not allow to brown. |
| 3. |
Lay a sheet of filo on a large cutting board. Brush with melted butter. Cut into strips about 1 1/2 to 2 inches wide. Place 1/2 tsp of the cheese mixture on each strip about 1 inch from base. Fold to form a triangle. Continue until all cheese mixture and filo have been used. |
| 4. |
Place triangles, side by side, in a shallow roasting pan or baking sheet*. |
| 5. |
Bake at 350F for 20 minutes, or until golden brown. Serve at once. |
| 6. |
NOTE: Feta Cheese Triangles freeze well. Before serving, remove from freezer and let stand 15 to 20 minutes. Bake at 325F until golden brown. |
| 7. |
* Pan must have four joined sides; otherwise butter will fall to bottom of the oven and burn. |
