Ingredients:
1 Cup
 Sugar
3 Tbsp.
 Cornstarch
1 Cup
 Boiling Water
4
 Egg Yolks, slightly beaten
2 Tbsp.
 Butter
4 Tbsp.
 Lemon Juice
1/4 Tsp.
 Salt
1
 Lemon Rind, grated
Recipe Directions:
1.  Combine sugar and cornstarch in top of double boiler.Add the water slowly, stirring until thick.
2.  Gradually add the egg yolks, butter, grated lemon rind, lemon juice and salt.Stir for 1 or 2 minutes before pouring into a baked shell.
