Ingredients:
2 Tsp.
 Olive Oil
1/2 Cup
 Long-Grain White Rice
1 Cup
 Low-Salt Chicken Broth
1
 Medium Jalepeno, seeded and chopped
1
 Medium Clove Garlic, crushed
1/4 Cup
 Fresh Cilantro, chopped
Recipe Directions:
1.  Heat oil in nonstick skillet. Saute rice 2 minutes. Add broth, jalapeno pepper and garlic. Cover; bring to a boil. Lower heat and simmer 15 minutes. Remove from heat.
2.  Stir in cilantro and salt and pepper to taste. Sppon onto plate with chicken and serve.
