| 4 oz. | Chopped bacon |
| 1 | Onion (minced) |
| 1 pound | Lean ground Beef |
| 2-3 tsp | Chili Powder |
| 1 tsp | Salt |
| 2 cup's | Peeled fresh or canned tomatoes |
| 1/3 cup | Chopped black olives |
| 1 cup | Corn |
| 1/2 cup | Sour Cream |
| 1 cup | Shredded Montery Jack Cheese |
| 1 cup | Chicken stock |
| 1 1/2 cup | Corn meal |
| 6 tsp | margarine or shortening |
| 1/2 tsp | baking powder |
| 1/4 cup | Milk |

Preheat the oven to 375F. Cook bacon untill crisp, pour off excess fat add onion and cook untill softened, about 5 minutes. Add the beef, chili power, and salt and cook for five minutes,stiring to break up meat. Stir in the tomatoesand cook 5 minutes more |

Add the olives, corn and sour cream, and mix well. Transfer to a 15inch rectangular or oval baking dish and set aside. |

For the crust, bring the stock to a boil in a saucepan; season it with a little salt and pepper. |

In a food processor, combine the corn meal or Mesa harina(if you can find) margarineor shortening,baking powder and milk. Process untill combined. |

With machine on , gradullay pour hot stock untill smooth thick batter is obtained. Pour batter over top of the beef mixture and spread evenly. |

Bake untill top is just browned, about 20 minutes. Sprinkle Cheese over surface and continue baking untill melted and bubbling. 10-15 minutes more. Serve Immediately. |
