| 1/3 Cup | Dried Cranberries |
| 1/4 Tsp. | balsamic vinegar |
| 1/4 Cup | light mayonnaise |
| 1 Tbsp. | dijon mustard |
| 1 Tbsp. | water |
| 1/2 Tsp. | sugar |
| 1/4 Tsp. | black pepper |
| 2 | garlic cloves - crushed |
| 6 Cup | torn romaine lettuce |
| 1 Cup | mandarin oranges |
| 1 Cup | thinly sliced cucumber |
| 1 Cup | seasoned croutons |
| 1/2 Cup | thinly sliced red onion |

Combine cranberries and vinegar in a bowl, cover and let sit for 30 minutes.

Add the mayonnaise, mustard, water, sugar, pepper & garlic to vinegar and whisk until well blended. Cover and chill. |

Combine the remaining ingredients in a large bowl, add the dressing and toss gently. |
