| 2 Cups | Sugar |
| 1 Tsp. | Baking Soda |
| 1 Cup | Buttermilk |
| 1/8 Tsp. | Salt |
| 2 Tbsp. | Butter |
| 2 1/2 Cups | Chopped Pecans |
| 1 Tsp. | Vanilla |

In a large heavy saucepan, combine sugar, soda, buttermilk and salt. Cook over high heat 5 minutes, stirring often and scraping bottom of pan. |

Add butter and pecans and continue cooking 5 minutes or until candy reaches soft-ball stage (238 degrees on a candy thermometer). Remove from heat, add vanilla, then cool slightly. |

Beat until creamy, then quickly drop from a tablespoon onto wax paper and let cool. |
